There are two things in life that can never go wrong: bacon (obviously) and pickles. When you bring these two together, you create one of the most incredible BBQ appetizers or tailgate foods that will never get old! This smoky and spicy bacon-wrapped pickles recipe is one you’ll need to try for yourself.
Ingredients
- Pickle spears (we prefer the hot and spicy types)
- Bacon
- BBQ rub (we prefer a sweet and spicy rub)
Spicy Dill Pickle Dip
- ⅓ cup mayo
- ⅓ cup sour cream
- ¼ cup pickle juice
- 1 minced clove of garlic
- 1-2 tbsp finely diced dill
- Salt and pepper to taste
- Hot sauce to taste
To prepare this bacon-wrapped pickle recipe, first remove as many pickle spears as you need from the jar. You can choose to dry them off or not; from my experience, there isn’t a noticeable difference in the end result. Next, take a strip of bacon and wrap it around each pickle spear from one end to the other, securing it with a toothpick to keep the bacon in place. Finally, apply a light amount of your favorite sweet and spicy BBQ rub to the outside of the bacon, and let it sit for about 15-20 minutes while you set up your grill.
For this cook, you’ll want to set up your Slow ‘N Sear® Kettle for cooking at around 350°F using the Slow ‘N Sear® Deluxe insert and our Drip ‘N Griddle pan to catch any drippings. To do this, simply fill a chimney basket with briquettes and get them mostly lit before dumping them into the Slow ‘N Sear® Deluxe.
Once the grill is up to temperature, place the bacon-wrapped pickles on the grill opposite the coals. Add a small piece of hardwood for an extra kiss of smoky flavor, then close the lid and cook for about 45-50 minutes.
While the bacon-wrapped pickles are cooking, mix together your dip. Combine the mayo, sour cream, pickle juice, garlic, and dill. Once mixed, add salt and pepper along with hot sauce to taste. Feel free to kick up the heat with your favorite hot sauces.
After about 45-50 minutes of cooking, the bacon will be done, slightly crispy, and ready to come off the grill. Let them cool for a few minutes, as the pickles will be incredibly hot. Serve with your spicy dill dipping sauce, and these bacon-wrapped pickles will become one of your new favorites!
