
When it comes to a great BBQ appetizer, it's hard to beat something with bacon — and these chicken bacon skewers are no exception. In fact, they might be one of the best BBQ appetizers or tailgate snacks you’ll have this year. Even better, they’re handheld, making them an easy-to-eat party treat. Take a look!
Ingredients:
- Chicken Thighs
- Bacon
- BBQ Rub Of Choice
- Brown Sugar
- BBQ Sauce
The Prep
To get started, cut your chicken thighs into bite-sized pieces. We cut each thigh into three portions. Then, cut your bacon into three sections so it wraps neatly around the chicken.
To assemble the skewers, wrap a piece of bacon around each piece of chicken and thread it onto a skewer. Continue until the skewer is full. Season the assembled skewers with your favorite BBQ rub, then sprinkle a little brown sugar on top of the bacon — it helps enhance the flavor!
The Cook
For this cook, we used the Slow 'N Sear Home 'N Roam Travel Kettle, but you can use the same setup on any larger grill.
Start by setting up your grill for a hot and fast indirect cook at 350°F–375°F. Place the skewers on the side of the grill opposite the coals. Add a small chunk of hardwood for some extra flavor, close the lid, and cook for about 20 minutes.
After 20 minutes, the chicken will be nearly done. Now’s the time to glaze the skewers with your favorite BBQ sauce. Close the lid and continue cooking for another 10 minutes, or until the internal temperature reaches at least 165°F.
Once done, let them cool for a couple of minutes — then dig in!
