With the cooler temperatures of fall, there’s no better time to make this incredible bourbon apple-stuffed pork tenderloin recipe. It’s sweet, savory, and salty, and with the addition of bourbon, it takes everything to a whole new level. To make things even better, this recipe can become a new holiday tradition for smaller gatherings without missing a beat!

Bourbon Apple Filling
- 2 Apples
- 2 Tbsp Brown Sugar
- 2 OZ Bourbon
- BBQ Rub (We used Heath Riles Apple Rub)
- Pinch of Cinnamon
To prepare this bourbon apple-stuffed pork tenderloin recipe, begin by making your apple filling. Peel and core both apples, then dice them into small pieces so they fit nicely inside the tenderloin.
For this cook, set up the Slow ‘N Sear® MasterKettle for cooking at around 325°F using the Slow ‘N Sear® Deluxe insert and our Drip ‘N Griddle pan to catch any drippings. I like to fill the Slow ‘N Sear® about ¾ full and then separate it into two sections, first lighting one side to cook the apples, then combining the lit and unlit sides for the remainder of the cook.
To make the apple filling, place a cast iron skillet over the lit coals, then add your diced apples, brown sugar, bourbon, cinnamon, and BBQ rub. Mix everything together until the sauce thickens and the apples soften.
With the apple filling finished, let it cool slightly while you cut the pork tenderloin so it lays flat. Next, scoop your apple filling onto the tenderloin and spread it evenly. Wrap the stuffed pork tenderloin in prosciutto, then apply a little BBQ rub to the outside for added flavor.
With everything prepared and your grill set to around 325°F, place the stuffed pork tenderloin on the grill opposite the Slow ‘N Sear® and begin cooking. This cook will take about 45 minutes, but ensure the internal temperature reaches 145°F.
Once the apple-stuffed pork tenderloin is finished, remove it from the heat and let it rest for 5-10 minutes before slicing it into ½-inch thick rounds. Serve and enjoy!
