INGREDIENTS
- 2 lbs chicken wings
- 1 tbsp cornstarch or baking powder
- 1.5 tbsp BBQ rub (We used Heath Riles Honey Chipotle Rub)
Jalapeno Hot Honey Sauce
- ½ stick butter
- 2 diced jalapenos
- 1 tbsp chili flakes
- ½ cup honey
- 1 tbsp apple cider vinegar
- 1 tbsp BBQ rub
PREP/COOK
For this recipe, you will be preparing about 2 lbs of chicken wings. To get started, apply the cornstarch or baking powder to the chicken wings, followed by the BBQ rub. For this recipe, we recommend a BBQ rub that is slightly sweet with a touch of heat. Mix everything together so that the chicken wings are fully covered in the seasoning mixture.
While the wings are absorbing some of the flavors from the BBQ rub, prepare your grill for cooking. For this cook, we are using the Slow ‘N Sear® MasterKettle Grill along with both the Slow ‘N Sear® Deluxe insert and the Drip ‘N Griddle pan. Set it up for cooking between 350°F and 375°F.
Once the grill is up to temperature, place the wings on the grill opposite the coals, and add a small piece of hardwood for a touch of smoky flavor. Close the lid and cook for about 45 minutes, or until the wings reach an internal temperature of 185°F.
While the wings are cooking, mix together the Jalapeno Hot Honey Sauce by combining the butter, jalapenos, chili flakes, honey, apple cider vinegar, and BBQ rub. Place this mixture over the direct coals and simmer for just a couple of minutes. This will soften the jalapenos and allow all the flavors to blend together.
Once the sauce is ready, remove everything from the grill and toss the wings in the Jalapeno Hot Honey Sauce. Serve hot.
