Nothing could be easier than this delicious Bang Bang Chicken Skewer Recipe - it’s simple to do, has great flavors, and can be made right after work or any day of the week! If you have never had bang bang chicken, just imagine a sweet and spicy sauce that is rich and creamy in flavor and can be put on really anything, but chicken or shrimp are always a good choice. We made this using skewers, but you can really do this with any cut of chicken you have on hand. The finished result is addicting, to say the least, so make sure to make a few extras for leftovers because they are that good.
INGREDIENTS NEEDED (Makes 4-5 skewers)
- 3 Chicken Breasts (cubed)
- 6-inch skewers
- 1 Tbsp Olive Oil
- BBQ Rub To Taste (We used an SPG blend)
Bang Bang Sauce
- 1/2 Cup Mayonnaise
- 3 Tbsp Sweet Chili
- 1 Tbsp Sriracha
- 1/2 Tbsp Rice Vinegar
*Adjust the sweet chili and sriracha as desired
PREP
To get started with this recipe, take your chicken breasts and cube them up into bite-sized pieces about an inch big; this will allow for the perfect bite when finished. After the chicken has been cubed up, add both your oil and your BBQ rub. For this recipe, we used a simple blend of salt, pepper, and garlic (SPG) to add some great flavor while still allowing the bang bang sauce to be the star of the show.
Once the chicken is seasoned, place the bite-sized chicken pieces onto your skewers. We used shorter 6-inch skewers to make them more versatile for any occasion, whether a family meal or a party snack. With the skewers now made, place them off to the side for about 15 minutes while you set up your grill for cooking.
For this cook, we used the Slow ’N Sear Kettle Grill along with the Slow ’N Sear Deluxe insert for indirect two-zone cooking with a medium direct zone in the Slow ’N Sear. To do this, we filled up the Slow ’N Sear about halfway full and then got the coals mostly lit. We then closed the lid and let the grill stabilize around 325°F.
Lastly, while you are waiting for the coals to come up to temperature, it’s the perfect time to quickly mix together your bang bang sauce. This sauce is incredibly simple to make and will only take a couple of minutes to mix together. Simply combine your mayonnaise, sweet chili, sriracha, and rice vinegar together in a bowl and then give it a quick taste. If you like, you can add more sweet chili or sriracha to taste as needed.
COOKING
With the coals sitting at around medium heat, it’s time to get the skewers on the grill. It’s important that you don’t walk away from the grill at this point because the cook doesn’t take very long, and you will see various flare-ups at different times during the cook (which is always kind of fun).
For this cook, place the skewers directly over the Slow ’N Sear and begin cooking, making sure to rotate the skewers as needed. Essentially, during this step, we are searing for the desired color that you like. After a few minutes of cooking over the direct coals, simply spin the grate so that your skewers are now opposite the coals and then brush on some of your delicious bang bang sauce to both sides of the skewers. This will help bake on some of the sauce, adding a lot of flavor. Next, close the lid and continue to cook indirectly until your chicken reaches around 160°F, which won’t take long.
When your chicken is up to 160°F, spin the skewers back over the hot coals and then once again brush on more of your bang bang sauce. You’ll need to work quickly as the oils in the mayonnaise will drip onto the coals, adding some fire to the cook. Just like before, continue rotating the skewers for only about 30-60 seconds and then remove them from the grill and serve.
