Moink Balls Recipe
Introduction
Moink Balls are perfect for parties, tailgating, outdoor events, gatherings or great for just the family on a week night. Our take on this popular recipe is made by Rus from Smoky Ribs BBQ using our Slow 'N Sear® Travel Kettle Grill.
Ingredients
- 2lb of 80/20 ground beef
- 8oz block of sharp cheddar cheese cut into squares
- 1lb of thin cut bacon cut in half
- BBQ seasoning to taste
- BBQ sauce to taste
Prep
Begin by cutting cheese into small squares. Now take the bacon and cut into half. Take around 2 ounces of ground beef and stuff one cheese cube into the center and form into a ball.
Wrap with 1 slice of the bacon, and use a toothpick to secure the bacon to the meat ball.
Repeat until all of the moink balls are made. Now apply a generous amount of your favorite bbq seasoning to the balls.
Cook
With our grill temperature locked in around 275°F, place the prepared moink balls onto the grill opposite the coals and place in a leave-in remote thermometer in the center of one of the moink balls to begin monitoring the internal temperature as it cooks. Next, close the lid and begin smoking the moink balls.
When the moink balls reach an internal temperature of 155°F, apply the bbq sauce to all the balls. You can brush the sauce on, or as an option, you can roll each ball in the sauce for full coverage. Let sauce set until internal temperature reads about 165°F, as pictured below using our SnS-100 Instant Read Thermometer.
Let rest for around 5 minutes and enjoy!
