INGREDIENT LIST:
- 1lb 80/20 Ground Beef (we made 1/2 lb patties)
- Brioche Burger Buns
- Havarti Cheese
- Pickle Slices
- Arugula
- Burger Sauce
- BBQ Rub
Guinness Onion Jam
- 2 Sweet Onions Diced
- ½ Stick of Butter
- ⅓ cup Brown Sugar
- 12 oz Guinness Beer (Stout)
For this recipe, we recommend starting by making your Guinness onion jam. To do this simply take your sweet onions and dice them up and then get the Slow ‘N Sear set up for direct cooking around a medium heat.
Once the Slow ‘N Sear has been set up for cooking around medium heat, place your cast iron skillet over the coals and then add in your butter along with your diced onions and the begin cooking your onions until they have softened. When the onions have softened through, add in your brown sugar, 12 oz of Guinness, and lastly your BBQ Rub to taste. Mix everything together and then continue to cook until the liquid has thickened up and resembles a jam like consistency - Remove from heat.
With the Guinness onion jam complete it’s time to cook our burger patties. To do this we formed our burgers into thick ½ lb patties and then seasoned them with our BBQ Rub. Once seasoned, place the burger patties overtop of the Slow ‘N Sear and begin cooking until they reach an internal temperature of around 150F making sure to continuously flip until done. When the patties are up to 150F, move the burgers opposite the coals, add on your cheese and let melt.
After a few minutes your cheese should be melted. At this point remove the burger patties from the grill and begin to build your burgers. We built ours on a brioche bun topped with some burger sauce, pickles, arugula, our burger, and then topped with our delicious Guinness onion jam!
