Old Fashioned Crispy Wings Recipe

Ingredients
- 2 pounds of chicken drumettes and flats.
- 2 tablespoons ground black pepper
- 1 ½ cups corn starch
- 1 tablespoon kosher salt
Old Fashioned Glaze
- 1 cup water
- 1 cup demerara sugar
- ½ cup bourbon
- 1 tablespoon pickling spice
- 5-7 dashes aromatic bitters
Add above ingredients to a pot over high heat, mixing as you bring it up to a boil. Reduce heat and allow glaze to thicken to a maple syrup consistency.
Prep
Mix cornstarch, salt and pepper together in a large plastic bowl, with a lid. Add wings to the mixture and give them a good toss, to thoroughly coat the wings. Place wings on a wire rack, shaking off the excess breading as you do so.
Cook
To set up the grill add ¾ of a charcoal chimney of fully lit briquettes into the Slow 'N Sear charcoal basket. at one corner of the basket. Add a few (2-3) small chunks of cooking wood to the lit charcoal for smoky flavor.
With our grill sitting at 400ºF with clean smoke, place the wings onto the grill opposite the Slow 'N Sear. close the lid and begin cooking at 400ºF, flipping every 5-10 minutes.
Once wings are a crispy golden brown and have reached an internal temperature of 165ºF remove them from the kettle and place them on your serving platter. Drizzle the “Old-Fashioned” glaze on the wings, then garnish with a little fresh orange zest. Enjoy!
