- 2 tbs Pickle juice
Prep
To get started with this homemade Blue Cheese steakhouse burger you will want to start with some high quality 80/20 ground beef of your choice that is as fresh as possible.
Once you have everything you need for these steakhouse burgers, lightly spread out your ground beef and fold in about 1/4 cup of blue cheese crumble into your ground beef. Once incorporated, begin by forming your 1/2 lb balls of ground beef into perfectly round burger patties. Make sure you press firmly without compacting the meat to much. The more “squished” the beef becomes the dryer it will become as it cooks. Once the beef patties are formed season it with your favorite beef rub. In this recipe we seasoned it first with a little bit of kosher salt followed by our salt-free “Not Just for Beef Rub” which goes great on burgers!
Cook
With your burgers formed, place them onto the grill using the indirect cooking method with a cooking temperature around 250ºF. To do this place about 15 briquettes into the corner of the Slow 'N Sear® and get them fully lit. Once fully lit fill up the remainder of the Slow 'N Sear® about 3/4 full then add an optional piece of hardwood to add some delicious smoky flavor. Once the burgers are on the grill, add on your strips of bacon as well then close the lid and begin cooking until your burger reaches an internal temperature of between 135ºF-140ºF.
While the steakhouse blue cheese burgers are cooking, take the opportunity to prepare that delicious BBQ Mayo. This BBQ mayo is simple to make and will add a serious burst of flavor which really compliments the blue cheese! Mix it together well and let sit for a few minutes to allow all those flavors blend together!
Once your burgers reach an internal temperature between 135ºF-140ºF, open up the grill and mix together your remaining coals to get them roaring hot in order to give the burgers a final sear. While the coals are coming up to temperature, place the bacon over the coals for about a minute flipping frequently to avoid burning the bacon.
Once the bacon is done and coals are hot, move your burgers over the hot coals to give a nice sear for 45 seconds on each side twice placing on a slice of blue cheese onto the burgers right after your final flip. Once the burgers have been seared, remove them from the heat and begin to build the best blue cheese steakhouse burgers ever!
Enjoy!
