Surprised about the salt
I was hoping to get the recipe that 'Meathead' talks about, w/o the salt, so i can dry brine with salt 24 or more hours before, then use the seasoning
First try with rub and sauce
Yesterday I smoked two racks of St Louis cut pork ribs. One rack was salt and pepper Aaron Franklin style Second set was meathead recipe with dry rub and one coat of sauce. The meat is from a top supplier so no excuses. Both had great bark and flavor My family freaked out with Meatheads version though so I know what I’m going to do next time I’m particular and pleased with the product and the book. Couldn’t be happier and more motivated to do it again
This is the only product of the set I have used so far. It cakes causing it to come out very unevenly. (I live in a very dry climate) Flavor is ok, but nothing special. I do look forward to using the other products.
